Basic Lemon Pound Cake

I like to bake pound cakes when expecting guests for Fika ( a coffee break ) or after dinner dessert. It's easy and very delicious. You can add the type of berries you like for more flavor.  Enjoy!





Ingredients 

"butter and bread crumbs for the cake form"
3 eggs
2 cups granulated sugar
1 teaspoon vanilla
1/2 tsp salt
zest of 1 lemon
150g melted butter or margarine
3 cups flour
1 teaspoon baking soda


Lemon Mixture
1 cup powdered sugar
juice of 1 lemon
For serving
berries

Method 

Preheat the oven to 175C.

Grease and SPRINKLE WITH CRUMBS a round the cake mold with a hole about 1 1/2 l (12-bit).

Beat eggs, sugar, vanilla and salt porous. Stir in lemon peel, shortening and flour mixed with baking powder. Pour the batter into the mold.

Bake in the lower part of the oven about 40 minutes.

Allow the cake to cool for a while. Turn out one on a baking sheet on a rack.
Stir together powdered sugar and lemon juice. Make some holes in the cake with eg a swab. Spoon over lemon mixture so that it is sucked up in the cake.

Serve the cake with berries.
