Low Carb Easy Quinoa Recipe

Hello guys! Having a passion for cooking, love for food and food styling leads to creative cooking. 

Yesterday I created this recipe by myself and it happened to be so delicious, light , colorful and healthy so I thought of sharing it with you guys. After a weekend in Rome and lots of deliziosooo italian food, beverages, and ice cream etc.. I needed to go back to the healthy food routine again. I hope you enjoy this light meal! 






Recipe



























Ingredients


























2 round zucchini
1 big eggplant or 2 small
1 bell pepper
25 g butter

1 cup quinoa

1 tsp black pepper
A pinch of salt

A bunch of arugula



Method 

Quinoa: Combine 1 cup quinoa with 2 cups water in a medium saucepan. Bring to a boil. Cover, reduce heat to low, and simmer until quinoa is tender, about 15 minutes. Quinoa holds lots of water, so you have to make sure you drain it thoroughly after it's cooked.

Vegetables: Cut the vegetables into cubes first. And In a low heat melt the butter in a pan and add the vegetables. Add black pepper and salt then cover the pan and let it cook for about 10 minutes until the vegetables become tender.

Finally bring together the mixtures in a deep dish as shown in the photo above, use the arugula for the topping and serve.



Useful information

Quinoa  grain has been called a superfood,a term which is not in common use by dietitians and nutrition scientists.

Arugula has: Vitamin A  47% Vitamin C 25%  Calcium 16% Iron
