Swedish Cuisine: Parmesan Steaks in Chive Sauce

I recently posted this recipe on my Instagram but in the Swedish language, hoping that the auto translator will do its job right. Unforutnlty I received lots of questions about the ingredents and the measurements in my DM so I promised my followers to post the recipe on the blog. So there you go!



Steaks
500 g Minced meat - Beef
1 egg
50 g Parmesan cheese
0.8 tsp Salt Fine
2 pinch Black pepper Malen
0.5 tbsp olive oil
1 tablespoon Food & Bake Butter

Chives sauce
2 shallots
2 tablespoons Food & Bake Butter
1 teaspoon white wine vinegar
1.5 dl Whipping cream (1 dl = 96 g )
0.5 dl Water
2 teaspoons Veal/meat stock 
0.5 st Lemon
Chives - fresh
1 pinch Salt Fine
1 cream Black pepper Malen

Sides
700 g Potatoes Fast (Skip it for keto diet)
1 pinch Salt Fine
1 pc Broccoli Fresh

Cooking

 Peel and boil the potatoes in salted water. Cut broccoli into smaller bouquets.

2. Steaks: Put the minced meat in a bowl. Add eggs, grated cheese, salt, and pepper. Mix and shape 4-6 steaks. Heat oil and butter in a frying pan and brown the steaks on medium heat for about 2-3 min/side so that they get a nice golden brown frying surface. Lift out the steaks and place them on a plate.

3. Chives sauce: Peel and finely chop the shallots. Add butter to the pan and fry the onion softly. Add white wine vinegar, cream, water, and stock and bring to a boil. Put the steaks in the sauce and simmer on low heat for about 10 minutes.

4. Grate lemon peel and finely chop the chives. Add to the pan and mix again. Taste the sauce with lemon juice, salt, and pepper.

5.  Add the broccoli to the boiling potatoes and cook until the last minute. Strain the water and place the potatoes and broccoli in bowls.

6. Serve the parmesan steaks in the chive sauce together with boiled potatoes and broccoli.
