Swedish Recipe: Mushroom Soup For Fhe Fall (Svampsoppa)


1 onion
2 cloves of garlic
200 g fresh or dried mushrooms
1 tbs spoon of melted butter or regular butter.
1 tbsp plain flour
1 liter of water
2 cups cooking cream
1 teaspoon soy sauce
salt and pepper

Optional : 

1/2 dl white wine
Little bit of alpha-alfalfa sprouts
fresh thyme or
marjoram for decoration


Finely chop the onion and garlic. Slice the mushrooms. Fry everything in butter for a few minutes. Sprinkle over the flour and stir. Add the water, cream and soy (Wine optional). Let the soup simmer for 15 minutes. Season with salt and pepper.

If you want a smooth soup, mix it gladly, or let the it cook to get thicker (I usually add more flour if I want it more thick, It is a matter of taste). At the end add a "tuft" sprouts on top of the soup. Serve and enjoy it!
