Carrot, Chilli and Shrimp Soup

Hello guys! September is here and the soup weather and cravings started to kick in. This is one of my favoraite comfort food recipes full of vitamin c and rich in chili flavor. The shrimp's addition just makes it fancier, they are totally skippable.  Enjoy! 


You will need! 

1 Bag of frozen shrimps (unfrozen - room temperature) 
1 kg of carrots
1 yellow onion (s)
1 garlic clove (s)
1 tbsp butter
1 chili red chili, cored
1 pc salt
0.5 dl whipped cream
2 dice (s) chicken broth
1 liter of water
fresh thyme
pepper


1. Peel and cut the carrots into slices. Seed and mince chili. Chop onions and garlic.
2. Melt soft in butter. Add carrots and chili.
3. Salt and pepper. Fry for a minute and then add water, broth cubes. Cook for 15 minutes or until soft.
4. Pour in the cream and mix the soup smoothly. Add the shrimps. Sprinkle with thyme. Serve with garlic bread or your favorite bread!
