Low Carb Cauliflower Gratin


This is one of my favorite low carb recipes which I've came up with myself. I love the taste of cauliflower and egg. My mother used to boil cauliflower, dip it in egg and fry it which made a lovely summer side dish. From that taste combination I have created this recipe adding more flavors that goes perfect with Cauliflower. You can skip the bacon totally and add a tablespoon of olive oil instead. I hope you guys enjoy this recipe!

Ingredients

1 head cauliflower, cut into florets
3 eggs
2 dl milk / 200 ml
1 dl cream / 100 ml 
1 1/2 dl grated cheese / 1 cup
1 tsp salt
1 pinch black pepper

Fried bacon pieces and coriander to garnish. 


Method


Cut the cauliflower to 4 parts
You can either  steam or boil the cauliflower

"Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender, 5 to 7 minutes."
or
"Boil the cauliflower in a pot until almost tender for about 10 minutes." 

Strain the cauliflower and cut to small pieces. 

Fry your bacon until crispy brown and cut to small pieces as well. 

Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9-inch baking dish. 

Take the remaining bacon oil / fat from the fry pan and pour over the cauliflower and mix well with some salt and black pepper. 

Move the cauliflower to the baking dish like the one shown in the pictures. 

In a bowl mix together the egg, milk , cream and cheese very well. Then pour it over the cauliflower. 

Place some of the bacon on top and leave the rest until the gratin is baked.

Bake in the preheated oven until cheese is melted and browned, about 25 minutes.

Serve after garnishing with the remaining bacon and coriander.

  1. Really creative Ms Hend, healthy much, considering the very low calories in cauliflower. Will try for sure. Maybe mom recipe first:)
